This belly fillet immediately won us over. It has an almost creamy texture and the slices are really tasty without being too salty - when they touch the palate all the flavour floods out. Use them as you like: in salads or to prepare an unforgettable plate of spaghetti, and why not savour the pleasure of them "nature"?
The tuna is steamed and flesh covering the flanks and abdominal cavity are packaged directly into jars. The ventresca has a high level of fat compared to other cuts and is one of the most choice parts of the fish. It needs an artisan preparation which is the privilege of a few experts.
Tuna is a deeply rooted part of the Mediterranean culture: it has been fished, preserved and sold since ancient times. Aristotle himself remembers how it was being traded between the Phoenicians and the Carthaginians.
